About Us
From Beehive to Bottle Crafted in the Granite Belt, Queensland
Mount Stirling Meadery began where good mead should always begin, in the beehives.
Long before we ever fermented a batch, we were beekeepers, working with thousands of bees across a rugged, high-altitude landscape known for its cold nights, granite soils, and intensely flavoured produce. We weren’t looking to start a drinks brand. We were looking for a better way to honour our honey.
Too often, honey is treated as an ingredient to be masked or sweetened into submission. We saw something different: complexity, texture, and a sense of place much like wine, but shaped by bees rather than grapes.
So we built Mount Stirling Meadery to do one simple thing properly:
make modern mead from our own honey, pure and simple.
Every mead we produce starts with single-source honey harvested from our own hives. That honey is then carefully fermented to express its natural character, dry where it should be dry, aromatic where it should be expressive, and balanced enough to sit comfortably on the table alongside good food.
We don’t make medieval novelty drinks.
We make clean, contemporary meads designed for modern palates.
Being a beekeeper-run meadery matters. It means we control the quality from the very first step. It means we understand the seasons, the flowers, and the conditions that shape every harvest. And it means each bottle carries a genuine connection to this place, not a marketing story, but a lived one.
When you visit our cellar door in Thorndale, you’re not just tasting alcohol. You’re tasting the Granite Belt through the work of bees, fermentation, and patience.
That’s what modern mead should be.
Honest. Grounded. Unexpectedly refined.
Our Approach
Our approach is simple and deliberate: make modern Australian mead with honesty, care, and a strong sense of place.
Rooted in beekeeping and shaped by the Granite Belt, Mount Stirling Meadery crafts each mead from honey harvested from our own hives. We work patiently, allowing the character of the honey, the season, and the landscape to guide every ferment.
Whether you’re visiting our Stanthorpe cellar door or ordering online, we invite you to taste a mead that reflects where it comes from, the bees, the blossoms, and the high country that makes it possible.
