About the area
About the area
The Granite Belt region is located south-west of Brisbane in Queensland. Centered around the town of Stanthorpe, the Granite Belt has a long history of viticulture and winemaking and is one of the highest wine regions in Australia, with vineyards at more than 1000 metres above sea level.
Australian Spring Water
Australian Spring Water
Rainwater is considered the purest form of water. We utilise our rainwater collected from our cellar door and workshop roof, then triple filter it, then run it through a UV sterilizer that kills any bacteria, parasites or viruses that may naturally occur in a water system.
Warning: Handle with care. This isn’t just mead — it’s fire in a bottle. The Sting (Hot) takes smooth honey and forges it with molten chilli heat, creating an intense burn that surges across the palate and lingers in a long, fiery trail. This is the ultimate test for chilli fanatics who crave real danger in their glass.
Ways to enjoy:
-
Neat and chilled – if you’re brave enough to take it straight.
-
Over ice – for a slower, rolling burn that builds sip by sip.
-
With soda water – a sparkling kick that doesn’t let you off the hook.
-
In the kitchen – add a splash while barbecuing onions or brushing over meat for a fiery glaze.
Food pairing:
The Sting (Hot) stands tall with flame-grilled steak, charred vegetables, or smoked brisket. It also loves strong flavours — think mature cheddar, blue cheese, or even a square of dark chocolate to tame the fire.
Not for the faint-hearted, this mead is a dare in a glass — and the perfect gift for those who live for heat.
